Understanding Tea Oxidation: Why Green, Oolong and Black Tea Taste Different

Green tea can taste fresh, sweet and vegetal. Oolong may be floral, creamy, roasted or richly fruity. Black tea can offer honey, malt, cocoa, dried fruit and warm spice.
These teas may appear entirely different, yet all can be produced from the leaves of the same plant: Camellia sinensis.
The difference is created after harvesting.
Through a series of carefully controlled steps, the tea maker determines how much the freshly picked leaf will oxidise. This gradual transformation changes its colour, aroma, texture and flavour, creating many of the distinctions we recognise between green, oolong and black tea.
Understanding oxidation is one of the simplest ways to make sense of the wider tea world. It explains why a leaf that begins fresh and green can become bright and floral, deeply fruity or dark and malty before it reaches your cup.

What Is Tea Oxidation?
Tea oxidation is a natural chemical process that begins when compounds inside the leaf are exposed to oxygen.
While the leaf remains intact, many of these compounds are held within separate cellular structures. When the leaf is rolled, bruised, shaken or otherwise disturbed, its cells are damaged. Enzymes and polyphenols that were previously separated can then interact in the presence of oxygen.
The leaf begins to change:
- Its green colour gradually becomes copper, red or brown
- Fresh vegetal aromas develop into floral, fruity or malty notes
- Its bitterness and astringency change
- The brewed liquor becomes deeper in colour
- The texture and finish become rounder, richer or more structured
This is an enzymatic process rather than simple exposure to air alone. Tea makers manage it through temperature, humidity, airflow, leaf moisture and the amount of physical damage given to the leaf.
Oxidation is not a defect. It is one of the principal tools used to shape the identity of a tea.
Oxidation Is Not the Same as Fermentation
The words oxidation and fermentation are sometimes used interchangeably in older tea writing, but they describe different processes.
Oxidation is driven primarily by enzymes naturally present within the tea leaf reacting with oxygen after the leaf cells have been disturbed.
Fermentation involves microorganisms such as bacteria and fungi. This microbial transformation is especially important in certain dark teas, including many forms of Hei Cha and ripe Pu’er.
Black tea is therefore oxidised, not fermented. Pu’er and other post-fermented teas involve a different category of transformation.

How Oxidation Changes Tea Flavour
Fresh tea leaves contain polyphenols, amino acids, sugars, aromatic compounds and enzymes. During oxidation, some of these compounds are transformed into new ones.
Catechins, which can contribute bitterness and astringency, are gradually converted into compounds including theaflavins and thearubigins. These contribute to the colour, briskness, body and depth associated with more heavily oxidised tea.
At the same time, the tea’s aroma changes. Fresh-cut grass, green vegetables and raw leaf may give way to:
- Flowers and ripe fruit
- Honey and warm sugar
- Stone fruit and dried fruit
- Malt, cocoa and wood
- Spice and baked aromas
Oxidation does not work alone. Cultivar, growing environment, harvest date, roasting and drying all influence the finished cup. However, oxidation provides much of the foundation upon which these flavours are built.
Green Tea: Preserving the Fresh Character of the Leaf
Green tea is made by limiting oxidation very early in production.
After picking, the leaves are heated to deactivate the enzymes responsible for oxidation. This stage is often called fixing, or shā qīng 杀青 in Chinese tea production.
The heat may be applied through pan-firing, steaming, baking or other methods. Once the enzymes have been deactivated, the leaves can be rolled, shaped and dried without continuing to oxidise in the same way as oolong or black tea.
Because oxidation is restrained, green tea often retains flavours associated with fresh plant material:
- Sweet grass
- Green beans or peas
- Chestnut
- Fresh herbs
- Spring flowers
- Soft marine or savoury notes

Why Green Tea Can Taste Bitter
Preventing oxidation preserves many of the leaf’s original catechins. These compounds can provide freshness and structure, but they can also become noticeably bitter or drying when brewed with water that is too hot or for too long.
Green tea generally benefits from cooler water and shorter infusions than black tea. The precise temperature depends on the individual tea, but beginning around 75–85°C provides a useful starting point for many Chinese green teas.
Oolong Tea: Oxidation as a Spectrum
Oolong occupies the broad territory between green and black tea.
Rather than stopping oxidation almost immediately or allowing it to progress extensively, the tea maker encourages it selectively and then halts it at the desired stage.
The leaves may be withered, gently shaken, tossed or bruised. This damages the leaf edges and encourages oxidation in specific areas. The tea maker repeatedly observes the aroma, colour and feel of the leaf before applying heat to stop the process.
This is why oolong is extraordinarily diverse.
A lightly oxidised oolong may feel close to green tea, with notes of:
- Fresh flowers
- Lilac or orchid
- Cream
- Melon
- Sweet grass
A more heavily oxidised oolong may offer:
- Peach and apricot
- Honey
- Ripe tropical fruit
- Baked sugar
- Warm spice
Roasting adds another layer. A roasted oolong can display toasted grain, nuts, caramel, charcoal or mineral notes, regardless of its oxidation level.

Does Oolong Have a Fixed Oxidation Percentage?
Oolong is often described using percentages, such as “20% oxidised” or “70% oxidised”. These figures can be useful as broad descriptions, but they should not be treated as precise universal measurements.
There is no single industry-wide scale applied identically by every producer. Two teas described with the same percentage may still taste very different because of cultivar, leaf maturity, bruising technique, roast and growing region.
It is more useful to think of oolong as a spectrum of controlled transformation rather than a rigid numerical category.
Black Tea: Allowing Oxidation to Develop Fully
Black tea is allowed to oxidise much more extensively than green tea or most oolong.
After withering, the leaves are rolled or twisted to break their cellular structure and expose the internal compounds to oxygen. The leaves are then rested under controlled conditions until the desired colour and aroma have developed.
They gradually change from green to copper and deep reddish brown. Once the tea maker is satisfied with the transformation, the leaves are dried to halt the process and stabilise the tea.
More extensive oxidation creates flavours commonly associated with black tea:
- Malt and warm grain
- Honey and caramel
- Cocoa
- Dried fruit
- Rose and warm flowers
- Wood and gentle spice
In Chinese tea terminology, this category is called hóng chá 红茶, meaning “red tea”, after the copper-red colour of the infused liquor. In Britain and much of the Western world, it is called black tea, referring to the dark appearance of the finished leaf.

A Simple Comparison

These are useful tendencies rather than strict flavour rules. A pan-fired green tea may taste nutty, a dark oolong may feel almost like black tea, and a delicate Jin Jun Mei may be lighter than expected.
Where Does White Tea Fit?
White tea is sometimes described as unoxidised, but this is not entirely accurate.
Its leaves are generally withered and dried with very little rolling or deliberate bruising. Because the leaves remain relatively intact, oxidation happens more slowly and less evenly than it does in oolong or black tea.
Nevertheless, meaningful oxidation can occur during the long withering process. This contributes to the hay, flowers, honey and soft fruit found in many white teas.
The difference is one of handling. White tea is usually allowed to transform gently, while oolong oxidation is actively encouraged and carefully manipulated.

Does Darker Tea Always Mean Stronger Tea?
Not necessarily.
A dark liquor may suggest extensive oxidation, roasting or ageing, but colour alone does not reveal strength, caffeine content or quality.
A pale green tea can be intensely bitter if over-brewed. A dark black tea may be soft, sweet and smooth. A heavily roasted oolong may look dark while retaining a gentle body.
Strength is influenced by:
- The amount of leaf used
- Water temperature
- Brewing time
- Leaf size and shape
- The cultivar and harvest
- Processing and storage

Can Oxidation Continue During Storage?
Once tea has been thoroughly dried, the rapid enzymatic oxidation used during processing largely stops. However, tea can continue to change gradually through slower chemical reactions as it ages.
This is one reason why aroma and freshness can fade when tea is exposed to oxygen, heat, light or moisture. Poor storage does not recreate the controlled oxidation of tea production. It usually causes delicate aromas to disappear and flavours to become flat or stale.
Keep everyday green, oolong and black teas in airtight containers away from heat, moisture, light and strong odours.

How to Taste Oxidation for Yourself
The clearest way to understand oxidation is to taste across the spectrum.
Prepare a green tea, an aromatic oolong and a black or red tea during the same session. They do not need to be brewed identically. Use the temperature and timing suited to each tea, then compare:
- The colour of the dry and infused leaves
- The aroma before and after brewing
- Freshness compared with ripeness
- Floral, fruity, vegetal or malty qualities
- The texture across the tongue
- The length and character of the finish
Notice how the green tea preserves the feeling of the fresh leaf. Observe how the oolong sits between freshness and ripeness. Then consider how the black tea has transformed those same broad building blocks into warmth, sweetness and depth.

One Leaf, Many Expressions
Oxidation reveals how much possibility exists within a single plant.
Stop the transformation early and the cup may remain bright, green and refreshing. Guide it carefully and the leaves may become floral, creamy or fruit-laden. Allow it to deepen and the tea may develop honey, malt, cocoa and warm spice.
None of these expressions is inherently better than another. Each reflects a different balance between the fresh character of the leaf and the transformations encouraged by the tea maker.
The next time you prepare a cup, look beyond the colour of the liquor. Notice whether its flavours feel fresh or ripe, green or warm, delicate or deeply developed.
Within those differences is the quiet craft of oxidation.
